Winemaking
Selection of Grenache on schist terroirs conferring a pretty minerality. The harvest is carried out at night. The grapes are crushed and baked for macerations of 4 weeks up to 6 weeks for the ripest Syrah and Grenache. Traditional vinification, with separation of grape varieties, pumping over and load shedding. The wine is aerated and the lees are resuspended throughout the post-fermentation maceration phase in order to impart fat to the wine and coat its tannins.
Food & Wine Pairings
Sparkling ruby color. This great Minervois is a composition of aromas of strawberries, raspberries and blackberries, raised by light notes of spices and wood. On the palate, this wine is powerful, racy and endowed with a remarkable concentration. Excellent balance.
The Excellence cuvée will reveal all its flavors accompanied by a braised beef with tomatoes and red wine, a leg of lamb, a duck breast with porcini mushrooms, a fricassee of mushrooms, or ripened cheeses.
