Château Capitoul, with its precious stone and pebble-strewn Mediterranean vineyard, is like a diamond in the rough set in the rolling hills of La Clape. With 62 ha under vine at the tip of the La Clape hill range, its terroir is the appellation‘s most maritime. Its vineyard dates back to the 14th century, when it was farmed under the aegis of Narbonne Cathedral, which gave the Château its name. In 2015, La Clape entered the select group of Languedoc fine wines, joining the collection of prestigious, internationally renowned French appellations.

Winemaking
Mechanical harvest with destemming and double selective sorting carried out at the plot and at the reception. The vinifications are conducted for 15 days on marc, with manual pigeage and thermoregulated musts, between 22 and 24 ° C. Breeding in concrete tanks for 12 months.
Food & Wine Pairings
The color is a deep red with ruby reflections. A racy and powerful nose where black fruits and spices mingle. Its lively and fresh palate develops an elegant and complex structure. The silky tannins slowly blend with notes of roasting, black cherry, black olive and cedar.
Serve with a beef tournedos with morels, a Provençal vegetable tian, pesto tagliatelle and pine nuts, Reblochon, Saint Nectaire.
