CHÂTEAU VILLERAMBERT - Opera Red
- AOP Minervois
The vineyard of Château Villerambert stretches over 158 hectares in AOP Minervois. Gallo-Roman traces which were found around the property lead to believe that the first vines were planted in the 4th century AD. According to archives, Château Villerambert already owned a vineyard in 1231, since 2014 is part of Vignobles Bonfils since 2014.

Winemaking
Night harvest. The grapes are crushed and baked for macerations of 4 weeks up to 6 weeks for the ripest Syrah and Grenache. The lees are resuspended throughout the post-fermentation maceration phase in order to impart fat to the wine and coat its tannins. Grenache is raised in stainless steel tanks away from the air while Syrah and Carignan benefit from micro oxygen supplies to preserve all their fruit.
Food & Wine Pairings
The Opéra cuvée reveals a pretty ruby red colour. The nose develops fruity notes (strawberry, raspberry, blackberry) raised by a hint of spices giving it character. The palate is round and silky with a pleasant fruity material and a beautiful balance.
To marry with grilled lamb chops, Thai vegetable rice with soy and peppers, or a dessert based on fruits or almonds.
