Winemaking
The harvest is carried out at night, in order to protect the berries from the heat and preserve all the aromas. The grapes are treated in the cold before pneumatic pressing. The wine is aged in vats on fine lees with regular batonnage for 6 months.
Food & Wine Pairings
Aromas of small white flowers intertwined with white-fleshed fruit, peach and apricot.
This cuvée is to be combined with a lobster bisque with rust on croutons, a risotto of green vegetables, cooked pasta cheeses (Comté, Beaufort, Emmental, ...).
