Les Carrasses wines are the fruit of a collaboration between Vignobles Bonfils and Domaine et Demeure specialists in luxury wine tourism and exceptional prestige property Selected from parcels chosen for their complementarity and the exceptional quality of their grapes, the wines in this range have been specially created for the Chateau de Carrasses a 19 th century wine domain near Beziers which has been completely renovated and transformed into refined and luxurious accommodation.

Winemaking
Traditional vinification. The berries are lightly trodden and fermented at a temperature of 28 °C. The different actions (winding, pigeage, work on lees, micro oxygenation etc.) are adapted to extract aromas and colors, build the mouth media and balance the taste impression.
Food & Wine Pairings
Garnet color, deep and intense. The nose is dominated by notes of ripe black fruit (blackcurrant, blackberry), supplemented on aeration by shades of leather, undergrowth and spices. The palate offers a lot of volume, fat, and a great feeling of softness. The freshness, which seems to rise in the final, reveals a touch of violet.
This cuvée goes perfectly with a rack of lamb, meat in sauce, game or ripened cheeses.
