Winemaking
Night harvest. The grapes are crushed and baked for macerations of 4 weeks up to 6 weeks for the ripest Syrah and Grenache. Separation of grape varieties, reassembly and load shedding. The lees are resuspended during maceration. Ageing in barrels for 12 months for part of the cuvée.
Food & Wine Pairings
A wine with a pretty purple color with bright reflections. The nose exudes intense notes of jammed black fruit (blackcurrant, blackberry, blueberry), black olive and scrubland. Powerful, well structured and ample on the palate, with volume and a lot of fruit, this Minervois is also marked by mineral notes that give it a lot of personality.
Goes well with roast beef in salt crust or sauce, dried tomato cannelloni and ricotta.
