Winemaking
The vinification combines tradition and modernity, with long vats and aging in barrels. Each grape variety is vinified separately. The harvest is destemmed and slightly trodden before incubation. Maceration is carried out in wooden vats. The fermentation temperature is now below 28°C. Aging of 15 months in oak barrels (new and one wine).
Food & Wine Pairings
Dress of a pretty dark red. Intense and complex nose, exhaling powerful aromas of black fruits (blackcurrants, blackberries, blueberries), violets and spices, mixed with vanilla and chocolate notes. The palate is endowed with a particularly rich and fruity material and benefits from a beautiful frame, carried by powerful and ripe tannins.
This cuvée is fully revealed with a duck confit, a spicy turkey leg, or a platter of various cheeses.
