Located in the heart of the largest classified natural site in Languedoc, Château Capitoul takes advantage of its unique location and stands as an exclamation point at the end of the peninsula. Ôde is a tribute to its Mediterranean terroir and the French department of Aude where Capitoul is located.

Winemaking
The grapes are picked at the coolest hours of the night and then pressed directly, away from oxygen, to ensure optimal preservation of the aromas. The blend contributes to the aromatic complexity of this cuvée, mixing fresh and fruity notes and spicy scents. Ageing on fine lees, after alcoholic fermentation, accentuates the volume in the mouth.
Food & Wine Pairings
Dress of a pretty delicate pale pink with sparkling reflections. Beautiful aromatic complexity on the nose, on gourmet notes of small red fruits and citrus fruits evolving towards floral notes. The palate is rich in fruity and spicy flavors with a mineral side giving it a lot of character. Feeling of freshness very pleasant at the end of the mouth.
Capitoul - Ôde can be enjoyed as an aperitif, or accompanied by tapas, a bouquet of shrimp, grilled sea bream, a vegetarian tagine or even a strawberry panna cotta.
